I love muffins! We eat them at least once a week, sometimes more! What I love about muffins is you can make them on a free night and have a healthyish breakfast ready to go! Without having to reach for sugary cereal or breakfast bars. Luckily, my kiddos love muffins too! Healthyish Girl loves helping me make muffins, especially cracking the eggs. (Which is totally her just squeezing them until they burst. Egg shells, anyone? It adds a nice crunch.) She always runs to the sink right after to rinse off her yucky hands, but that never stops her from cracking those things. I have been known to get in trouble if she misses “helping” with the eggs in a recipe.
This recipe uses whole wheat pastry flour. The only kind I have available to me would Bob’s Red Mill 100% Stone Ground Whole Wheat Pastry Flour.
It isn’t organic, but I could order organic off Amazon if I wanted to. The price difference is pretty steep so I usually just stick to the kind that’s available at my little health food store. I love using whole wheat pastry flour because I get all the nutrition of whole wheat flour but with a much finer consistency! It’s perfect for muffins, waffles, brownies, or even cookies!
This recipe also uses coconut oil. I use it a lot. As you can probably already tell! I love it for many reasons, but in this recipe it makes the muffins super moist and adds a nice coconut flavor. When my health food store has a sale on this stuff, I always grab it up! I always get organic, unrefined, extra-virgin, cold-pressed coconut oil. It isn’t a cheap purchase, but it usually lasts awhile, even when I use it to bake a couple times a week and in my homemade body butter and diaper cream (recipe coming soon!) I currently have Viva Labs Organic Coconut Oil in my cabinet because I got it on sale. 🙂 If you have any aversions to coconut oil (or an allergy, sorry Maggie! ;)) you can replace it with melted butter (organic if possible) in this recipe.
To make these muffins extra moist, I also add apple sauce! It’s an easy, healthy way to moisten up any baking.
